It is time for summer parties. I’ve been sharpening my knives, planning menus, and thinking about the flavors and textures of the season.

My goal with this project is to treat Big Sky and Bozeman’s food lovers to a world-class experience, whether the catering event is a backyard BBQ centered around the rich flavors of wagyu, a two-hour, 17-course sushi meal for a large party, or an intimate family meal.

This is the 27th year I’ve been making sushi, but just the 3rd summer for my Omakase private dining service. After all that time, I’ve gained experience blending traditional Japanese preparation techniques with fresh, clean, expertly sourced ingredients that match the American palate. The Omakase project focuses on detail, carefully matching the flavors of the season to the tastes and moods of each party.

This season, I’ve designed Omakase’s menus to incorporate the inspiration I experienced while traveling throughout Japan last fall. My trip inspired an interest in new flavors and techniques, while reminding me what I love about creating and sharing delicious Japanese food. The nourishment and care each bite provides brings people together and creates meaning and purpose.
